Preparing for Utah & A Healthy Meal

Hello there loves! This has been a really relaxing weekend for me. I have been very busy at work as I try to meet some deadlines before leaving for Utah [for work]. As I was looking at my photos to consider a week & weekend recap, I realized that I didn't have very many. This week mainly consisted of working out, working and trying healthy new dishes with babe. One of the many things I love about my husband is that he is not afraid to try new dishes that are healthy but full of flavor! He ended up making some lime & cilantro shrimp with zucchini spaghetti. It was INCREDIBLE! Full of flavor and spice! And very friendly towards my body goals! haha! 

I posted the dish on Instagram and a few people asked for a recipe BUT there isn't one! Between combining recipes he found online and using some of the techniques we learned in our cooking class last weekend at Central Market. After a few more times of him making it, my goal is to write it up into a beautiful recipe that I can share. 

Its so strange how some weeks I can go without taking many pictures the entire week and then there are other weeks...that are photograph and selfie madness. 

Not sure if any of you will remember the last time I was in Utah. I have been to Utah at least 4 times or more in the past year. The last time I was there was in April 2015. You can check out that blog post here. Sadly the hotel that I stayed at last night was SOLD OUT this time, so I had to settle for second best. I know, I know. It is all very tragic but I plan to work my  behind off anyways!
